La cong\u00e9lation rend la racine crue granuleuse.<\/li>\n<li>Cuire la betterave jusqu\u2019\u00e0 ce qu\u2019elle soit tendre sous la fourchette. Faire refroidir \u00e0 l\u2019eau glac\u00e9e, peler, s\u00e9cher, trancher, couper en cubes ou r\u00e9duire en pur\u00e9e, et conserver dans un sac \u00e0 fermeture \u00e0 glissi\u00e8re.<\/li>\n<li>Plus tard, d\u00e9congeler la betterave et la r\u00e9chauffer juste assez pour qu\u2019elle soit bien chaude jusqu\u2019au c\u0153ur.
