En pr\u00e9sence de pruine, on p\u00e8le tr\u00e8s l\u00e9g\u00e8rement le panais pour limiter le gaspillage et on jette les pelures. Si le c\u0153ur est trop fibreux et dur pour \u00eatre cuit, par contre, mieux vaut ne pas l\u2019appr\u00eater. Tr\u00e8s sucr\u00e9, le panais est excellent r\u00e2p\u00e9 dans des g\u00e2teaux et des pains.
