pommes de terre est un peu humide, la mettre dans une po\u00eale \u00e0 frire et cuire \u00e0 feu moyen ou doux pour la faire s\u00e9cher. Le s\u00e9chage peut prendre jusqu\u2019\u00e0 10 minutes selon le type de pommes de terre et la quantit\u00e9 de liquide dans la pur\u00e9e. Si vous utilisez des pommes de terre Russet et que vous n\u2019avez pas ajout\u00e9 beaucoup de liquide, vous pouvez sauter cette \u00e9tape.<\/div><\/li><li id=\"wprm-recipe-13591-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Mettre la farine dans un grand r\u00e9cipient peu profond et faire un puits. Puis ajouter la pur\u00e9e de pommes de terre en faisant \u00e9galement un puits au milieu. (Si vos pommes de terre sortent tout juste du fourneau, laissez-les refroidir l\u00e9g\u00e8rement avant de continuer).<\/div><\/li><li id=\"wprm-recipe-13591-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Ajouter l\u2019\u0153uf battu et le sel dans le puits de pommes de terre. \u00c0 l\u2019aide d\u2019une fourchette, incorporer doucement la pur\u00e9e de pommes de terre \u00e0 l\u2019int\u00e9rieur du puits, puis la farine. Quand une p\u00e2te lisse mais pas trop collante commence \u00e0 se former, prendre la moiti\u00e9 de la p\u00e2te \u00e0 la main et la plier sur elle-m\u00eame; tasser l\u00e9g\u00e8rement la p\u00e2te et tourner le r\u00e9cipient d'un quart de tour avant de r\u00e9p\u00e9ter l'op\u00e9ration. Un peu de farine dans le r\u00e9cipient n\u2019a pas encore \u00e9t\u00e9 incorpor\u00e9e, c\u2019est normal! Si la p\u00e2te colle aux doigts, prendre un peu de farine sur les bords du r\u00e9cipient et saupoudrer sur la p\u00e2te avant de plier. Si la p\u00e2te est humide, mais qu\u2019elle ne colle pas, laisser la farine au fond du r\u00e9cipient.<\/div><\/li><li id=\"wprm-recipe-13591-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Apr\u00e8s l'avoir pli\u00e9 environ 15 fois, couper la p\u00e2te en deux. Sur un plan de travail bien farin\u00e9, rouler la moiti\u00e9 de la p\u00e2te pour former un boudin d\u2019environ 2 cm de diam\u00e8tre. \u00c0 l\u2019aide d\u2019un couteau ou d\u2019un coupe-p\u00e2te, couper le boudin en parts de 1 cm. Enrober les parts de farine pour que les extr\u00e9mit\u00e9s collantes n'adh\u00e8rent pas au plan de travail. Disposer les parts sur une plaque \u00e0 p\u00e2tisserie jusqu\u2019\u00e0 la cuisson. R\u00e9p\u00e9ter l\u2019op\u00e9ration avec l\u2019autre moiti\u00e9 de p\u00e2te.<\/div><\/li><li id=\"wprm-recipe-13591-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Pour la cuisson, porter \u00e0 \u00e9bullition de l\u2019eau sal\u00e9e dans une grande casserole. Au m\u00eame moment, faire revenir du beurre dans une grande po\u00eale \u00e0 frire \u00e0 feu moyen. Quand le beurre commence tout juste \u00e0 changer de couleur, ajouter une grande partie de l'estragon et mettre \u00e0 feu doux pour que le beurre ne br\u00fble pas.<\/div><\/li><li id=\"wprm-recipe-13591-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 10px;\">Cuire les gnocchis par lots. Prendre 1\/3 des gnocchis et les mettre dans l\u2019eau bouillante. Mettre le beurre \u00e0 feu moyen. Au bout de quelques minutes seulement les gnocchis remontent \u00e0 la surface; les retirer avec une \u00e9cumoire, pour que l\u2019eau s\u2019\u00e9goutte, et les mettre imm\u00e9diatement dans le beurre. Faire dorer 3 minutes de chaque c\u00f4t\u00e9; l\u2019ext\u00e9rieur sera croustillant.
