David Jorge’s Leftover Turkey Casserole

Here, he shares his recipe for a Leftover Turkey Casserole that’s ooey gooey on the inside and crunchy on top. Enjoy your holiday leftovers in this savoury, comfort food treat.

Ingredients

Casserole

  • 20 ounces cooked turkey, chopped
  • 15 ounces stuffing
  • 5 ounces cooked Brussels sprouts, cut in half
  • 8 ounces cooked green beans, roughly chopped
  • 7 ounces cooked carrots, cut 1 inch pieces
  • 15 ounces mashed potatoes
  • 9 ounces cooked wild rice

Bechamel Sauce

  • 2 ounces butter
  • 2 ounces flour
  • 20 ounces milk
  • 9 ounces gravy

For the crust

  • 2 ounces parmesan cheese, finely grated
  • 1 ounce parsley, finely chopped
  • 1 1/2 ounces olive oil
  • 1/2 baguette, dried and food processed into crumbs

Instructions

Prepare the casserole

  1. Combine the casserole ingredients in a large bowl. Set aside.

Prepare the Bechamel Sauce

  1. Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown — about 2 minutes. Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil.
  2. Add into casserole bowl and mix all the ingredients together.
  3. Pour into an oven-safe casserole dish. Set aside.

Prepare the crust

  1. Combine the crust ingredients in a small bowl.
  2. Sprinkle evenly over casserole.

Bake and serve

  1. Bake at 350 degrees for approximately 45 minutes or until it starts to bubble.
  2. Remove from oven, serve, and enjoy.
