Preheat oven to 350°F (180°C) and line 9x5 loaf pan with parchment paper.
Wash bananas well under cool running water and remove tough parts from each end.
Chop peels into small pieces and place in food processor or blender with bananas and 2-3 Tbsp water. Blend until smooth.
In small bowl, mix flour, baking soda, baking powder, cinnamon and salt.
In large bowl, beat sugar, oil or butter, eggs, and vanilla. Stir in banana mixture.
Add dry ingredients to wet. Stir gently then add chocolate chips or nuts.
Pour into loaf pan and bake for 45-50 minutes or until toothpick inserted comes out clean and top springs back to the touch.
Cool in pan for 15 minutes, remove and cool on wire rack.
Helpful Tips:
Use very ripe bananas for the sweetest flavour and the softest peels. Clean, frozen banana peels will blend even more smoothly.
Use walnuts, pepitas, dried cranberries or raisins instead of chocolate chips.
Make this recipe with 3 ripe bananas if you’re not ready to try the peels.
