Add all ingredients to a blender (or food processor) and blend on high until frothy, about 30 seconds.
Preheat a griddle or well-seasoned cast iron pan over medium-high heat for several minutes (this prevents sticking). When you splash a drop of water on the pan it should sizzle right away.
Brush or spray the griddle with oil/nonstick spray. Pour batter directly from blender onto the preheated griddle by about 3 tablespoonfuls at a time for small, easier-to-flip pancakes. Cook 1-2 minutes per side. Use your thinnest metal spatula to flip them once halfway through.
