Banana Pancakes

No ratings yet
Easy 3-Ingredient Banana Pancakes: ONE banana, TWO eggs and TWO tablespoons of flour whizzed in the blender. You can scale up the recipe to as many servings as you like. Leftovers freeze well - freeze in a single layer before packing into airtight storage containers. Serve with maple syrup, greek yogurt, or warm peanut butter.
Total Time 30 minutes
Course: Main

Ingredients

  • 1 banana
  • 2 large eggs
  • 2 tbsp flour
  • Optional pinch of salt
  • Oil or nonstick spray for pan

Method

  1. Add all ingredients to a blender (or food processor) and blend on high until frothy, about 30 seconds.
  2. Preheat a griddle or well-seasoned cast iron pan over medium-high heat for several minutes (this prevents sticking). When you splash a drop of water on the pan it should sizzle right away.
  3. Brush or spray the griddle with oil/nonstick spray. Pour batter directly from blender onto the preheated griddle by about 3 tablespoonfuls at a time for small, easier-to-flip pancakes. Cook 1-2 minutes per side. Use your thinnest metal spatula to flip them once halfway through.
