Quick Pickled Strawberries

Ingredients
  

  • 1 cup (250 g) strawberries
  • 1/2 cup red wine vinegar
  • 2 tbls sugar
  • 1 tsp pink peppercorns
  • A few sprigs of fresh mint

Method
 

  1. Put sugar and vinegar in a pan and gently
  2. heat until the sugar is dissolved.
  3. Crush the peppercorns, then add them to the pan along with the mint.
  4. Remove from the heat and let the mixture cool a little.
  5. Pour the pickle mixture over the strawberries.
  6. Leave for 20 minutes.
