Leftover Quesadilla
Quesadillas are a quick and easy way to make leftovers tasty. You can make these in a sandwich press, oven, or a frying pan.

Ingredients
- tortillas
- Leftovers (Leftovers that will work well in a quesadilla include mince, stir fry and leftover cooked meat and vegetables)
- Grated cheese
- To serve: guacamole, salad, sour cream or sweet chilli sauce (optional)
Instructions
- Heat the sandwich press or fry pan.
- Lay one tortilla on the sandwich press or in the frying pan. Spread over leftovers and scatter with grated cheese. Add the second tortilla on top.
- Close the sandwich press and cook until the cheese is melted and the tortilla is crispy. Or bake until golden on top and cheese has melted. If using a frying pan you will need to flip the quesadilla in order to cook the other side.
- Cool slightly and place on a large cutting board, cut into wedges and serve with your choice of condiments and/or a salad.
Tips
- Be adventurous with your filling. You can use leftover vegetables (raw or cooked), different meats and sauces. Be careful not to overfill your quesadilla or it may be messy to eat.
- You can also spread some chutney, relish, or your favourite sauce on the tortilla before adding any toppings for more flavour.
- For a vegetarian option you can use lentils from a can instead of mince or other meat.
