They ripen very quickly if stored on the countertop.
Can I Freeze It?
Yes.
To freeze mangoes, cut the fruit in half or into slices and freeze on a tray before transferring to a reusable freezer bag. Mangoes can also be stewed with fruit juice to make a pie filling that can then be frozen.
To remove the skin from mangoes before freezing, blanch them in boiling water and then cool in a cold water bath. The skins should rub off easily.
Fresher For Longer
Separate out fruit that is ripening more quickly than the rest.
Mangoes that have bruising or dark spots are still safe to eat. Cut off any brown parts and chop the rest into wedges. If the mango is overripe and too soft to slice it can be blended into a smoothie.
Use It Up
Mangoes can be used in baking, smoothies, salads and chutneys … or simply gobbled up as a snack! Freezing mangoes at the peak of ripeness will retain their nutritional quality.
