Carrots are a great staple to keep on hand. To keep them fresh, store in the fridge in an airtight container. If they lose their crunch, revive them by soaking in cold water and try one of these five ways to use them up.
1. Add to Smoothies
The bright colour, sweet flavour and high fibre of carrots makes them an excellent addition to smoothies, even when they’ve lost their crunch.
2. Pickle Them
Enjoy pickled carrots with your next charcuterie or on top of tacos, burgers, or sandwiches. Put a little zip into limp carrots with Bob Blumer’s Pickled Lettuce recipe. Simply substitute peeled carrots for lettuce. Use a vegetable peeler to make beautiful carrot ribbons.
3. Use Them in Baking
Use shredded carrots to add moisture and texture to baking. Large or odd-shaped carrots are perfect for this classic carrot cake.
4. Make Soup

5. Add To Your Salad
Shredded or thinly sliced carrots are a great addition to any salad. They also make a great salad on their own. Simply toss grated carrots and apples with parsley, raisins and a lemon vinaigrette.
Did You Know?
You can eat carrot tops? They taste like a cross between parsley and carrots. Use raw in salads, make Bob Blumer’s pesto or cook like any other dark leafy green. But always cut the tops off before storing carrots to make the roots last longer.
