Although broccoli stalks taste great and are full of nutrition, they are often thrown away without a second thought. No longer!
There are many ways to make use of these super sources of fibre, folate and vitamins A, C, B2 (riboflavin) and B6.
2. Add Them To Your Soup
Don’t waste one bit of the broccoli! Include the stalks in your diced veggie blend for soups like minestrone, vegetable and chicken noodle, just as you would with diced carrots or celery. Pureed broccoli is also the foundation of broccoli cheddar soup.
3. Make Pesto
Substitute some of the basil in your favourite pesto recipe with the leftover cooked broccoli in your fridge to add a veggie punch to your pesto.
4. Use It In Salads
Thinly slice or grate the stalks for a refreshing crunch in your salad or slaw. Try pickling the stalks for that added flavour!
5. Add Them To Your Vegetable Stir-Fry
Chop, dice or slice broccoli stalks and add them to your stir-fry. They retain their crunch better than the florets.
