Crush peeled cloves with a little water and freeze the puree in ice cube trays, Once frozen, tip the cubes into an airtight container. You can use the garlic right from frozen.

The best way to store garlic is in mesh bags inside a dark, cold and moderately humid area of your kitchen.
Use It Up
If you’ve prepared too much garlic, pop it in the fridge in an airtight container – to suppress the smell – and use up within a couple of days.
Or try using dried garlic slices to make garlic-flavoured oil for salad dressings or cooking.
Did You Know?
Once garlic has been in the cold in the fridge, it will start sprouting within days after being brought to room temperature. If your garlic sprouts, plant the bulb in a small pot of soil and grow some garlic scape on your windowsill.
If your garlic bulb dries up, place it in your freezer bag full of vegetable peels and scraps to use in your next homemade broth. Alternatively, fry the garlic peels with oil and char it until black. The peels make a delicious base for a stock!
