The fridge is the best place to store stone fruits.
These fruits ripen very quickly when stored on the countertop.
Can I Freeze It?
Yes.
Cut fruits in half or into slices and freeze on a tray before transferring the frozen pieces into a freezer bag. You can also stew stone fruits to make a pie filling and freeze the filling.
If you want to remove the skin from stone fruits before freezing them, blanch the fruit and cool it in a water bath. The skins should rub off easily.
Fresher For Longer
Separate out fruit that is ripening more quickly than the rest. Don’t throw bruised fruits away – just cut off any brown parts and chop the rest into wedges for a snack or to add to smoothies.
Use It Up
Add slices of sweet stone fruit to a salad of bitter greens, salty cheese and pungent olives.

Stone fruits, once canned, can last for a long time and then used as toppings or pie fillings.
You can prevent peeled stone fruits from darkening by dipping them in a 1:4 solution of lemon juice and water (i.e., one tablespoon of lemon juice in four tablespoons (or ¼ cup) of water).
