We don’t waste leftovers in our house

Instead of letting leftover roasted veggies go sad and soggy in the fridge, we freeze them in a bag ❄️, a little at a time, until there’s enough to blend into a soup base .   And that one base becomes three meals: soup for me, a cheese sauce base for Dylan, and a pasta or casserole base for the kids.

So we don’t want to brag, but making one leftover work for every diet in our house? Yeah, that makes us Leftover Legends ✨

Halloween is over, but your pumpkin still has so much delicious potential! 🎃✨ Before you move on to winter prep, try these tasty ways to make the most of your pumpkin:

Make cozy purees: Chop and roast uncarved display pumpkins (or the clean, unpainted pieces) to blend into smooth pumpkin puree for pies, muffins, and morning oatmeal.

Simmer a hearty soup: Cube leftover pumpkin flesh and toss it into a slow cooker with curry spices, coconut milk, and broth for an easy weeknight meal.

Roast as a dinner side: Toss pumpkin chunks in olive oil, garlic, and herbs, then roast until tender to serve alongside your favorite autumn dishes.

Préparez des purées réconfortantes : Coupez en morceaux et faites rôtir les citrouilles décoratives non sculptées (ou les morceaux propres et non peints) pour les réduire en une purée onctueuse à utiliser dans vos tartes, vos muffins et votre gruau matinal.

Préparez une soupe copieuse : coupez la chair de citrouille restante en cubes et ajoutez-la dans une mijoteuse avec des épices pour curry, du lait de coco et du bouillon. Ce souper facile à préparer en semaine sera délicieux.

Faites-en un accompagnement pour le souper : Enrobez les morceaux de citrouille d’huile d’olive, d’ail et d’herbes, puis faites-les rôtir jusqu’à ce qu’ils soient tendres pour les servir avec vos plats d’automne préférés.
