Rotisserie chicken uses

We regularly buy a rotisserie chicken and use the leftovers to make the following meals – chicken with roasted broccoli, veggie confetti quinoa with chicken, chicken sandwiches, plus we use the carcass to make chicken broth for chicken noodle soup. Delicious ways to use up the whole chicken!
