Broccoli Stem and Apple Slaw

Crunchy, fresh, and a little sweet — this colourful slaw makes the most of often-wasted broccoli stems, with a bright pop of apple for balance. Of course, you can add the broccoli crowns too!

Ingredients
  

  • Stems from 2–3 broccoli heads
  • 1 carrot
  • 1 apple
  • 0.25 small red onion, finely diced
  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 2 tsp sugar
  • Salt and pepper, to taste

Method
 

  1. Wash broccoli stems and remove any tough woody parts.
  2. Use a grater to grate broccoli stems, carrot and apple. Or use a knife to cut into matchstick sized pieces. Toss together with diced red onion.
  3. Whisk together mayonnaise, yogurt, lemon juice, sugar, salt, and pepper.
  4. Toss together and chill for 30 minutes before serving.
  5. Store covered in fridge for 2-3 days.
  6. Helpful Tips:
  7. Add a handful of dried cranberries or raisins to the salad for an extra sweet touch or toasted slice almonds or sunflower seeds for a little crunch.
  8. Toss in other veggies or herbs you need to use up e.g. cabbage, radishes, cilantro, parsley or green onion.
