Broccoli Stem and Apple Slaw
Crunchy, fresh, and a little sweet — this colourful slaw makes the most of often-wasted broccoli stems, with a bright pop of apple for balance. Of course, you can add the broccoli crowns too!
Ingredients
- Stems from 2–3 broccoli heads
- 1 carrot
- 1 apple
- 1/4 small red onion, finely diced
- 2 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- 2 teaspoons sugar
- Salt and pepper, to taste
Instructions
- Wash broccoli stems and remove any tough woody parts.
- Use a grater to grate broccoli stems, carrot and apple. Or use a knife to cut into matchstick sized pieces. Toss together with diced red onion.
- Whisk together mayonnaise, yogurt, lemon juice, sugar, salt, and pepper.
- Toss together and chill for 30 minutes before serving.
- Store covered in fridge for 2-3 days.
- Helpful Tips:
- Add a handful of dried cranberries or raisins to the salad for an extra sweet touch or toasted slice almonds or sunflower seeds for a little crunch.
- Toss in other veggies or herbs you need to use up e.g. cabbage, radishes, cilantro, parsley or green onion.
