We're making corned beef cool with this simple fritter recipe. The sweet and crunchy salsa perfectly complements the super savoury fritters – it's a great recipe that relies on some store cupboard essentials.

Ingredients
  

For the fritters
  • Store in: Airtight container
  • Time: Fridge for 2 days, freezer 3-6 months
  • Where to store: Fridge or freezer
  • Reheat: Oven or microwave until piping hot. Reheat only once.
  • fresh coriander
  • 1 tsp chilli flakes
  • Juice of 1 lime
  • 4 spring onions
  • 198 gram tin of sweetcorn
  • 200 gram tinned peaches in peach juice
For the salsa
  • 1 tbsp paprika
  • 75 ml milk
  • 2 eggs
  • 100 gram plain flour
  • 2 spring onions
  • 340 gram tin of corned beef

Method
 

  1. First up, make your salsa. Finely chop your tinned peaches and add to a bowl with drained sweetcorn, 4 x sliced spring onions, salt, pepper and 1 tsp chilli flakes.
  2. Add the juice of 1 lime and a touch of the peach juice and stir to combine. Once happy with seasoning, add a handful of chopped coriander and set aside.
  3. Pop your oven to 180 (160 fan) and line a baking tray with parchment paper.
  4. Chop your corned beef into small cubes and thinly slice an additional 2 x spring onions.
  5. Add your plain flour, baking powder and paprika to a bowl with salt and pepper. Mix to combine.
  6. In a separate bowl or jug, beat your eggs and milk together before adding to your dry ingredients. Stir or whisk until you have a smooth batter.
  7. Add in your chopped corned beef and spring onion and stir to combine.
  8. Add a good glug of oil to a frying pan and once nice and hot, add a big spoonful of your batter. Try and keep it as circular as possible.
  9. Fry your fritter for 3-4 minutes before flipping over – you want them to be golden brown on each side.
  10. Add each cooked fritter onto the parchment-lined baking tray and pop back into the oven to keep warm while you cook the rest of the fritters.
  11. Serve the fritters alongside the salsa and enjoy!
