No-cook tomato sauce with shallots and olives

Tip: Serve on pasta or crostini, topped with shaved Parmesan cheese.

Ingredients

  • 11/2 lb Roma tomatoes, chopped (about 5 to 6) 750 g
  • 1/3 cup Sliced Green Olives, drained 75 mL
  • 1/4 cup finely chopped shallots 60 mL
  • 1/4 cup chopped fresh parsley 60 mL
  • 2 tbsp extra virgin olive oil 30 mL
  • 1 tsp red wine vinegar 5 mL

Instructions

  1. In a large bowl, stir tomatoes with olives, shallots, parsley, oil and vinegar; set aside.
