This omelet wrap is perfect for turning a small amount of leftovers into a whole new meal.

Ingredients
  

  • 1 tsp teaspoon olive oil
  • 1 tsp soy sauce
  • 0.75 cup leftovers
  • 2 eggs
  • 1 tsp teaspoon olive oil
  • 1 spring onion, chopped
  • 1 tsp soy sauce
  • 0.75 cup leftovers

Method
 

  1. Heat the oil in the pan on medium heat
  2. Tip the egg wrap onto your plate
  3. Allow the egg to set and then flip it to cook the other side.
  4. Pour the egg mixture into the pan and tilt the pan until the egg mixture covers the whole base.
  5. Lightly beat the eggs in a bowl and mix in the rice (if using), soy sauce and spring onions.
  6. Heat the oil in the pan on medium heat
  7. Add the heated up stir-fry in the middle of the egg, then roll up both sides and serve.
  8. Tip the egg wrap onto your plate
  9. Allow the egg to set and then flip it to cook the other side.
  10. Pour the egg mixture into the pan and tilt the pan until the egg mixture covers the whole base.
  11. Lightly beat the eggs in a bowl and mix in the rice (if using), soy sauce and spring onions.
  12. Add the heated up stir-fry in the middle of the egg, then roll up both sides and serve.
