Omelet Wraps
This omelet wrap is perfect for turning a small amount of leftovers into a whole new meal.

Ingredients
- 1 teaspoon teaspoon olive oil
- 2 eggs
- 3/4 cup leftovers
- 1 teaspoon soy sauce
- 1 spring onion, chopped
- 1 teaspoon teaspoon olive oil

Instructions
- Heat the oil in the pan on medium heat
- Lightly beat the eggs in a bowl and mix in the rice (if using), soy sauce and spring onions.
- Pour the egg mixture into the pan and tilt the pan until the egg mixture covers the whole base.
- Allow the egg to set and then flip it to cook the other side.
- Tip the egg wrap onto your plate
- Add the heated up stir-fry in the middle of the egg, then roll up both sides and serve.
