Oven roasted garlic fries

Ingredients
- 4 large russet potatoes (or any other potatoes on hand)
- olive oil (or any vegetable oil)
- pinch of salt
- 2 garlic cloves, minced
- 2 tablespoons fresh rosemary, or thyme, dill, or parsley (or any mix thereof), stemmed and chopped, or 1 Tablespoon of the dried equivalent
- 4 tablespoons grated parmesan cheese or any other hard cheese
- 2 teaspoons paprika—ideally smoked (optional)
Instructions
- Pre-heat oven to 450°F
- Cut potatoes into ½-inch thick strips (like chunky fries)
- Add potatoes to a large bowl, drizzle generously with oil, season generously with salt and toss.
- Spread potatoes out on a sheet pan and reserve the bowl. Bake potatoes for 50 minutes, turning once, or until potatoes are well-browned and super crispy.
- Return potatoes to the bowl and immediately sprinkle with garlic, herbs, parmesan and paprika.
- Toss to coat, and serve immediately.
