Quick Pickled Strawberries

Ingredients
- 1 cup (250 g) strawberries
- 1/2 cup red wine vinegar
- 2 tbls sugar
- 1 tsp pink peppercorns
- A few sprigs of fresh mint
Instructions
- Put sugar and vinegar in a pan and gently
- heat until the sugar is dissolved.
- Crush the peppercorns, then add them to the pan along with the mint.
- Remove from the heat and let the mixture cool a little.
- Pour the pickle mixture over the strawberries.
- Leave for 20 minutes.
