1. Freeze Them

Cut the zucchini to your desired size, blanch, drain and freeze on a tray until they are frozen. Once frozen, divvy up the zucchini into portions of your choice in reusable freezer-safe bags or containers.

Alternatively, grate the zucchini and freeze it in a bag. It will be watery when it thaws, so just squeeze out the excess liquid before using.

2. Use Them In Baking

Grated zucchini is a great ingredient in moist and delicious cakes. Zucchini bread is also a fantastic way to turn those soft zucchini into a nutritious and delicious treat!

3. Fry Or Roast Them

Slice into sticks, coat with egg and leftover bread crumbs, and deep fry. Or try charring them on a grill or roasting in the oven. Yet another idea is to sprinkle with parmesan and fresh herbs and bake on a rack over an oven tray for a tasty appetizer.
