Zucchinis should be stored in the fridge in a breathable bag in the high-humidity drawer.
Can I Freeze It?
Yes.
Wash, chop and blanch chopped zucchini, immerse in an ice bath, drain dry and freeze in an airtight container.
Or shred raw zucchini and freeze in an airtight container. You might want to portion it into several smaller containers.
Fresher For Longer
Keep the zucchini whole, dry and unwashed. Store it in a breathable or paper bag with one end open to encourage air circulation and place in your crisper drawer.
Use It Up
Zucchini are great cooked or raw. Use a peeler to slice them into ribbons for salads, or grate and fry with garlic and chili for a delicious pasta-type dish.
You can also oven bake zucchini into chips for a healthy treat.
