Cajun-spiced kale chips

Ingredients
- 12 cups kale leaves (about 2 medium bunches)
- 2 tbsp vegetable oil
- 2 tsp cajun spice
Instructions
- Preheat oven to 275°F
- Thoroughly wash kale; dry well using a salad spinner or paper towels.
- Place in a large bowl; toss with oil and Cajun spice to taste.
- Arrange in a single layer on 2 large parchment paper–lined baking sheets.
- Bake 25 min. or until crisp but still rich green in colour, turning the leaves halfway through.
- Let cool to room temperature before serving.
