Compost cookies

Compost cookies

Compost cookies are a great way to use up leftover snacks from a party – a handful of pretzels, potato chips or chocolate. With a mixture of sweet and salty, you will be surprised how good they taste.

  • Total Time: 45min
  • Serves: 10

Ingredients

  • 125g butter
  • ½ cup soft brown sugar
  • ½ cup white sugar
  • ½ teaspoon vanilla essence (or any other flavourings you have e.g. almond, peppermint)
  • 1 egg
  • 1 1/2 cups self-raising flour
  • ½ tsp salt
  • ½ cup rolled oats
  • 1 ½ cups of salty add- ins: plain potato chips, broken pretzels, salted peanuts etc
  • 1 cup of sweet add-ins: chocolate chips, M&M’s etc

Instructions

  1. Preheat oven to 180°C. Line two baking trays with baking paper.
  2. Beat butter, sugar, brown sugar and vanilla until pale and creamy, add egg and beat until mixed.
  3. Sift in flour and salt, add oats and mix until combined. Break up the pretzels and chips into smaller pieces, add them to the mixture then stir through the sweet add-ins.
  4. Roll heaped teaspoon sized balls of mixture and place on tray, press down lightly with a fork.
  5. Bake for approx. 12 -15 minutes.

Tips

  1. Only use plain salted chips, not flavoured ones.
  2. If you are watching your sugar intake you can reduce the sugar to 1/3 cup of brown sugar and a 1/3 cup of white sugar.
  3. Vary your add-ins to use what ever you have to use up, dried fruit and cereals work well.
