Fridge Harvest Stew

Ingredients
- 2 large garlic cloves, chopped
- 1/4 cup extra-virgin olive oil
- 14 ounces (1 can) stewed tomatoes
- 2 cups beef broth
- 3 cups (2 – 398 mL cans) cannellini beans, rinsed, drained
- 1/2 pound cooked meat leftover steak / roast beef, ground in food processor or roast ham, diced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 10 cups (1 bag) loosely packed greens, such as baby romaine, arugula or spinach
Instructions
- Check your fridge for leftover meat and mildly wilting greens.
- In a large pot, sauté garlic in olive oil until golden, 1-2 minutes. Add in canned tomatoes with juice.
- Add beef broth.
- Stir in beans, meat, and seasoning. Bring to a boil.
- Reduce heat and simmer, uncovered, 5 minutes. Stir in greens and cook until they soften (approx.. 1-2 minutes).
- Toast stale bread in the oven and serve as accompaniment!
