Use up leftover meat and mildly wilting greens with this hearty soup!

Ingredients
  

  • 2 large garlic cloves, chopped
  • 0.25 cup extra-virgin olive oil
  • 14 oz (1 can) stewed tomatoes
  • 2 cup beef broth
  • 3 cup (2 – 398 mL cans) cannellini beans, rinsed, drained
  • 0.5 lb cooked meat leftover steak / roast beef, ground in food processor or roast ham, diced
  • 0.25 tsp black pepper
  • 0.25 tsp salt
  • 10 cup (1 bag) loosely packed greens, such as baby romaine, arugula or spinach

Method
 

  1. Check your fridge for leftover meat and mildly wilting greens.
  2. In a large pot, sauté garlic in olive oil until golden, 1-2 minutes. Add in canned tomatoes with juice.
  3. Add beef broth.
  4. Stir in beans, meat, and seasoning. Bring to a boil.
  5. Reduce heat and simmer, uncovered, 5 minutes. Stir in greens and cook until they soften (approx.. 1-2 minutes).
  6. Toast stale bread in the oven and serve as accompaniment!
