Oven roasted garlic fries

Ingredients
  

  • 4 large russet potatoes (or any other potatoes on hand)
  • olive oil (or any vegetable oil)
  • pinch of salt
  • 2 garlic cloves, minced
  • 2 tablespoons fresh rosemary, or thyme, dill, or parsley (or any mix thereof), stemmed and chopped, or 1 Tablespoon of the dried equivalent
  • 4 tablespoons grated parmesan cheese or any other hard cheese
  • 2 teaspoons paprika—ideally smoked (optional)

Method
 

  1. Pre-heat oven to 450°F
  2. Cut potatoes into ½-inch thick strips (like chunky fries)
  3. Add potatoes to a large bowl, drizzle generously with oil, season generously with salt and toss.
  4. Spread potatoes out on a sheet pan and reserve the bowl. Bake potatoes for 50 minutes, turning once, or until potatoes are well-browned and super crispy.
  5. Return potatoes to the bowl and immediately sprinkle with garlic, herbs, parmesan and paprika.
  6. Toss to coat, and serve immediately.
