Rice Paper Rolls
Rice paper rolls are a quick way to repackage your leftovers – with no cooking required!

Ingredients
- 6 rice paper rounds
- Lettuce (soft varieties such as butter lettuce work well)
- Leftovers
- Sweet chilli sauce
- Coriander (or other herbs such as mint or chives, depending on what leftovers you are using)
Instructions
- Fill a bowl with warm water. The bowl will need to be big enough to submerge the rice paper in.
- Dip one piece of rice paper in warm water until it is pliable, but not soggy (follow the timings on the rice paper packet).
- Lay the wet rice paper on a flat surface, then add one or two leaves of lettuce in the bottom third of the rice paper.
- On top of the lettuce place a couple of tablespoons of your leftovers.
- Drizzle some sweet chili sauce and then add a few sprigs of coriander on top, if using.
- Roll the bottom third of the rice paper up over the filing. Fold in both of the sides and then roll up tightly.
- Repeat with remaining rolls. Serve with a dipping sauce.
Tips
- Vary the sauce and herbs that you use to complement what leftovers you have.
- These can be a bit fiddly to make the first few times until you get the hang of it. The trick is to make sure that the rice paper isn’t too wet.
