Rice Paper Rolls

Rice paper rolls are a quick way to repackage your leftovers – with no cooking required!

Ingredients

  • 6 rice paper rounds
  • Lettuce (soft varieties such as butter lettuce work well)
  • Leftovers
  • Sweet chilli sauce
  • Coriander (or other herbs such as mint or chives, depending on what leftovers you are using)

Instructions

  1. Fill a bowl with warm water. The bowl will need to be big enough to submerge the rice paper in.
  2. Dip one piece of rice paper in warm water until it is pliable, but not soggy (follow the timings on the rice paper packet).
  3. Lay the wet rice paper on a flat surface, then add one or two leaves of lettuce in the bottom third of the rice paper.
  4. On top of the lettuce place a couple of tablespoons of your leftovers.
  5. Drizzle some sweet chili sauce and then add a few sprigs of coriander on top, if using.
  6. Roll the bottom third of the rice paper up over the filing. Fold in both of the sides and then roll up tightly.
  7. Repeat with remaining rolls. Serve with a dipping sauce.

Tips

  1. Vary the sauce and herbs that you use to complement what leftovers you have.
  2. These can be a bit fiddly to make the first few times until you get the hang of it. The trick is to make sure that the rice paper isn’t too wet.
