Scotch Pancakes

The perfect breakfast for using up things in your cupboard, who doesn’t love pancakes. Get the whole family involved and make them your own way.

Ingredients

  • 3 eggs
  • 1 1/4 cups milk
  • 1 1/4 cups self-raising flour
  • pinch of salt
  • 2 teaspoons sugar
  • 2 tablespoons vegetable oil
  • your favourite toppings e.g. jam, honey, maple syrup

Instructions

  1. Add the eggs, milk, flour, 1 tbsp vegetable oil, sugar and salt to a large mixing bowl and whisk for 1 minute using an electric mixer or hand whisk.
  2. Heat 1 tbsp of oil in a large non-stick frying pan, and then drop in 2tbsp of the pancake batter.
  3. Cook for a minute, flip, cook the other side and serve!
